I was just wondering, when changing your stock springs and shocks to better aftermarket items, would you need to change the shock mounts as well?

no...

But if you get something like Tein or Tanabe, you have the option of getting them with the top mounts or without top mounts.

Yeah, pillowballs. Az has them so he can give some insight into them. I can't see how it could be benificial on double wishbone setups as the shock mount is only for bearing weight and not alignment/location.

Things to pay attention to are the :

shock mount collar bushes - make sure they're greased up with rubber grease sufficiently, and the shock collar has been stripped down 3-4mm to get rid of 'shock knock;.

Spring perch rubber - can wear out over time, either replace with oem or well-greased aftermarket urethane rings.
